Zucchini Boats

Ingredients:

  • 3–4 large zucchini
  • 1 package ground beef, turkey, turkey sausage, or pork
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 3 tablespoons sour cream
  • 1–2 tablespoons tomato paste 

Directions:

  1. Preheat oven to 350 degrees.
  2. Wash and dry the zucchini.
  3. Cut the zucchini in half lengthwise.
  4. Scoop out the seedy flesh of the zucchini with a spoon making a “boat.”
  5. Brown the 1/2 chopped onion in 1 tablespoon of olive oil.
  6. Add your meat, and sauté until it is brown.
  7. Break up the meat/sausage to make it very smooth.
  8. Add 1–2 tablespoons of tomato paste and brown along with the meat.
  9. Once browned, remove from heat and add 3 tablespoons of sour cream.
  10. Add filling into each boat until filled.
  11. Top with grated Parmesan cheese.
  12. Bake at 350 for 30 minutes.
