Easy Grilled Caprese Chicken

  • 6- 4 oz. boneless, skinless chicken breasts
  • 1/2 cup of your favorite Italian salad Dressing (like Wishbone®)
  • 6 slices of fresh mozzarella cheese
  • 12 large basil leaves
  • 6 large slices of fresh tomato
  • salt and pepper
  • balsamic vinegar or balsamic reduction, if desired


  1. Combine the chicken breasts and Italian dressing in a gallon sized plastic bag. Make sure chicken is coated with dressing. Close bag and refrigerate for 2 hours up to overnight (overnight for best flavor) turning bag occasionally to disperse dressing. 
  2. Heat grill to med-high. Remove chicken breasts from marinade, and place on hot grill. Discard leftover marinade. Grill chicken until done (internal temperature of 170 degrees F) turning to brown on both sides. 
  3. Place chicken on platter, immediately top with one slice of cheese, 2 basil leaves and 1 tomato slice on each chicken breast. Season with salt and pepper. (Drizzle with balsamic, if desired) 
  4. Tent with foil. Allow to sit for 5-10 minutes before serving to let the cheese begin to melt. Serve with linguine, if desired.
