Breakfast Frittata

Ingredients

  • 1- 2 dozen eggs
  • 1/2 - 1 cup half-n-half
  • salt and pepper
  • 1/2 - 1 sweet onion, chopped small
  • 2-4 garlic cloves, minced
  • Any veggies you like, I use:
  • 1 bag frozen leaf spinach, thawed (or you can use fresh baby spinach)
  • Any grated cheese you like: fontina, asiago, cheddar, swiss, etc.
  • butter
  • Oil or Wegmans basting oil


Mix well eggs, half-n-half, and salt and pepper in bowl and set aside. Saute onions, garlic, and any other veggies in some butter and a little oil until soft. 

Pour eggs over veggies. Sprinkle grated cheeses over top. Cook on med/low until sides are cooked. Put in oven and bake on 350 until firm (20 minutes). Make it your own! You can add in cooked sausage, leftover breakfast potatoes, chopped ham, whatever vegetables and cheese you like or whatever you have on hand. Use a large frying pan. Cut into wedges.
